Watermelon, Lime & Ginger Jelly Recipe

This is a great savoury jelly recipe using Watermelon. This works very well on white meats or just served on a cracker.
  • 8 cups of pureed watermelon
  • 3 cups of cubed watermelon
  • Juice of 4 limes
  • 2 ½ cups of sugar
  • 2 packet pectin (unsweetened)
  • 230g of ginger, finely grated
  1. In a food processor or a blender, puree some watermelon to get at least 8 cups of water melon puree. Place in a pot and boil under medium heat to reduce liquid by 50%. Add in the cubed watermelon and simmer for an additional 25 minutes.
  2. Mix the sugar and pectin together.
  3. Add the sugar and pectin mix to the watermelon puree along with the lime juice, grated ginger. Continue heating on high heat to a rolling boil for another 5 minutes until mixture begins to boil and thicken. Keep mixing during this period to prevent mixture from burning on the bottom.
  4. Jar the hot jelly in some pre-sterilized jars. Cool on a table in room-temperature for at least 2 hours.
  5. When cool, store in the refrigerator for up to 6 months.
