Instant Matcha Cookie Mix – You Will Need:

Instant Matcha Cookie Mix

Instant Matcha Cookie Mix – Butter, Eggs, and the Instant Mix. Not pictured above are the chocolate chips which will be added later.

  • 2 sticks of cold butter, cubed (250g)
  • 2 large eggs

Equipment & Yield

This recipe should yield you 30 cookies comfortably using a medium cookie scoop.

Instructions

  1. HEAT, oven to 350℉. Line your baking sheets with parchment paper or a silicone mat.
  2. WHIP cold butter until there are no more cubes. Add the instant Matcha Cookie Mix (without the chips) and continue mixing to break up any butter chunks. You should get a coarse mixture at the end. Note: You can include the White Chocolate chips at this point, it just may require a bit of elbow grease and a spatula to mix the dough into shape.

    Mix the butter with the Matcha Cookie Mix until no large chunks of butter are left.

  3. ADD eggs. 1 at a time while mixing until each one is fully incorporated. After the eggs are mixed in, fold in the chocolate chips using a spatula.

    Add one egg at a time and incorporate it on a slow speed at first and then use a medium speed.

  4. SCOOP cookie dough into 2 1/2 inch diameter balls and place evenly on baking sheet.

    Scoop out your cookie dough. If you do not have a cookie scoop, try to make sure all of the doughballs are relatively consistent and roll the dough into a ball.

  5. [Optional] Place the shaped cookie dough in the fridge for an hour before baking. This helps keep the cookie from spreading too much during the baking process.
  6. BAKE cookies for 10-15 minutes or until the cookies turn slightly tan on the sides.

Ingredients (all handmixed in small batches)

  • Flour
  • Premium White Chocolate Chips
  • Granulated White Sugar
  • 100% Premium Kyoto-Sourced Matcha from Ippodo
  • Baking Soda

General Tips

  • Good quality matcha has a limited shelf life. We recommend using the mix within the month to get the best flavour.
  • The most noteworthy tip for great-looking cookies is to use cold butter and to chill the dough before baking
  • We recommend adding in macadamia nuts to the mix as well, we did not include them in this mix due to it’s extremely short shelf life. If you are allergic to nuts, please leave it out.
  • Your oven temperature may vary, for the first bake, we recommend watching the oven to make sure the cookies do not burn!
