Yes if you can’t tell, I’m on a Matcha Green Tea fix right now.

What I love about the versatility in the quality stoneware mugs from Corningware is that I can put this recipe in both the microwave and a pre-heated oven and get something delicious after it.

Not only is it great for baking something in, the mugs are LITERALLY my go-to container when it comes to storing my soups and stews for lunch. I can put my soup in the container the night before, put it in the fridge or freezer overnight, and then bring it work, pop it in the microwave (with the lid on, because you can do that with this product) and you have a delicious hot soup for lunch.

Bringing this back to baking, I wanted to make a recipe that would be fun to bake or microwave but not give you a family’s worth of goods to consume. Enter in the Matcha Mug Cake Recipe, where one batch will make two perfectly sized mug cakes. Decorating them on top is also fun and a great festive activity especially this time of the year. Personally I like mine with some whipped cream and some fresh rasperries or pomegranate seeds.

Lastly, I want to just mention that the microwave instructions on this post will differ depending on your device settings. For my microwave, it tends to overheat in certain areas so I had to adjust accordingly to try and get it not to completely spill over when making it.

For the Cake

  • 3 large eggs
  • 3 tbsp all purpose flour
  • 3 tbsp milk
  • 2 tsp baking powder
  • Pinch salt
  • 2 tbsp sugar
  • 2 tsp matcha
  • 4 tbsp butter
  • 60g white chocolate chips

Equipment & Yield

This recipe will yield you exactly two mug cakes.

Instructions for Baking

  1. PRE-HEAT oven to 350°F
  2. FILL a 3” deep pan with 1 ½” of hot water and place it in the oven while it is pre-heating.
  3. COMBINE the butter and white chocolate in a small bowl and place into a microwave for 35 sec on high then remove and mix the mixture until smooth. If not completely melted heat for another 15 seconds and repeat until melted and smooth.
  4. COMBINE the eggs, milk and white chocolate mixture in a larger bowl than in step (3)  and beat for a minute until well combined.

  5. MIX, in a third separate bowl, the remaining dry ingredients (flour, matcha, sugar, baking powder and salt) and mix until even.

  6. FOLD the dry ingredients into the wet mix until well incorporated.

  7. POUR the batter into 2 well buttered Corningware Pop-In Mugs and place into the water bath in the oven for 35 minutes or until a tester comes out clean.

  8. COOL outside of the oven for about 20 minutes before serving.

Instructions for Microwave

  1. Follow Steps 1-6 Above.
  2. POUR the batter into 2 well buttered Corningware Pop-In Mugs.
  3. MICROWAVE one matcha green tea mug cake for 1 minute, let it rest for 30 seconds and microwave for another 20 seconds.
  4. REPEAT for your other Matcha Green Tea Mug Cake.
  5. COOL for 10 minutes before serving.

General Tips

  • When microwaving, keep an eye on the mixture to make sure it doesn’t boil over. Typically I find that the rise with the microwave version is a lot higher than the baked one.
  • DO NOT ever put the lids of the Corningware Mugs in the oven, they will melt. Trust me.
  • Where to find the mugs? Good question! Here are some retailers that carry this mug, which I actually do recommend, it’s amazing.
