Looks kind of like a liege waffle, doesn’t it?

Every now and then, I crack out my waffle iron to make some waffles for breakfast. Normally I don’t like waking up early on weekends to make an elaborate breakfast, but waffles are a special occasion. In the Chong family, we don’t make waffles a super fancy ordeal by making our own batter; we usually use some sort of pancake/waffle mix that we picked up from the grocery store. What we do end up doing however is putting different ingredients in it to make the waffles unique (and very delicious!).

This is a recipe for a healthier spin on waffles incorporating fresh apples, chia seeds, raisins and oats. You can easily throw in different ingredients in your waffle mix as long as you make sure the consistency of the waffle batter is right . You want it to be runny enough to pour into the waffle iron, but not too much that it doesn’t hold its shape after being cooked.

Ingredients:

  • 1 large Red Delicious apple, peeled, sliced and diced
  • 2/3 cup of water (for boiling apples)
  • 1/3 cup of Sultana raisins
  • 1/2 teaspoon of cinnamon
  • 2 tablespoons of sugar
  • 1/2 cup of water
  • 2 eggs
  • 1/2 cup of rolled oats (I used the instant oats)
  • 3 tablespoons of chia seeds
  • 1 cup of pancake/waffle mix

Instructions:

  1. Boil the diced apple chunks in 2/3 cups of water with raisins, cinnamon and sugar for 10-11 minutes. The allow to cool for 10 minutes.
  2. Mix the dry ingredients (oats, pancake/waffle mix, chia seeds) in a bowl
  3. Pour the cooled apple mix into the dry ingredients, add 2 eggs and the remaining 1/2 cup of water.
  4. Mix thoroughly, making sure there are no lumps.
  5. Pour your mixture into your waffle iron and follow the instructions for medium done waffles.

These waffles go very well on their own and don’t need syrup, but you may add some with some butter if you like.
